Ingredients

120ml (4 fl oz) filtered water
2 tbsp sugar
2 tbsp rice vinegar
4 tbsp fish sauce
juice of 4 limes
½ carrot, grated
1 large garlic clove, finely grated

Directions

Place the water and sugar into a jug, stirring until the sugar is completely dissolved.
Add the rest of the ingredients, stir well, and then transfer the mixture into an airtight container. Store in the fridge for up to 2 weeks.
