Just doing this one tonight! Added some lemons and limes squeezed and halfed to the base of the tray 10 mins before cooking. See if it does anything. Also had some lamb rub, looks great.

In your video you say you'll add water (under the metal grill), but you have left it out of your writen recipe. Deal breaker if left out?

If you have an old oven that doesn't have fan forced, definitely add the water. For newer ovens, you can leave that step out.

Thank god you specify the difference between convection and fan. Some chefs automatically assume you have a fan and some (depending on location) assume you don't.
