Ingredients

30ml (2 tbsp) peanut oil
5 peeled green prawns
1 Chinese sausage, sliced thin on an angle

1 egg, beaten
1 tbsp each of sweet soy sauce, oyster sauce, and light soy sauce, mixed together
a small handful of bean sprouts
1 spring onion, sliced with greens and whites separated
1 portion fresh wide and fat rice noodles, zapped in the microwave and pulled apart

Directions

Prepare all ingredients in advance and place a wok over high heat.
Heat the oil, then add the sausage. Cook for 2 minutes, then push to one side of the wok.
Add the egg, which will cook quickly. Follow with the garlic chives, cooking them for 3 minutes. Then add the prawns and the white parts of the spring onion.
Cook the prawns for 2 minutes before adding the noodles and bean sprouts. Stir frequently and cook for 3 minutes.
Add the sauce around the edge of the wok and stir well to combine.
Turn off the heat and add the green parts of the spring onion.
Serve and enjoy!
