A one pan breakfast or a skillet breakfast is one of my favourite to cook when I'm camping.. but you can also make it at home. Sausages, bacon, potatoes, egg and some veg - it's the breakfast of champions!
Ingredients
- 8 breakfast sausages
- 8 slices of streaky bacon
- 3 potatoes, diced
- 1 brown onion, diced
- 1 red capsicum, sliced
- 4 eggs
- 2 spring onions, sliced
- 77g (2.7 oz) Boursin garlic & herb cheese
- salt and pepper
- any seasoning blend you like
- 2 tbsp oil
Directions
Place a large skillet over high heat, then add the bacon and sausages. Cook for 5-6 minutes until golden brown and cooked through. Remove from the pan and set aside.
- Add the onions and potatoes to the pan. Season with salt and pepper and sauté for 10-12 minutes until golden brown and almost cooked through. Then add the sliced capsicum and any seasoning that you wish, and cook for another 2-3 minutes.
- Once all the vegetables are fully cooked, add about a quarter of a cup (60ml) of water to the pan to deglaze and release any fond from the bottom.
- Add the sausages and bacon back to the pan before cracking your eggs into 4 spots evenly around the pan. Season the eggs, cover, and cook for 2-3 minutes until the eggs start to cook.
- Add the cheese in four spots around the pan and place the lid back on for 30 seconds to allow the cheese to melt.
- Once the eggs are fully cooked and the cheese is melted, it's ready to serve. Garnish with some sliced spring onions and enjoy!
