It's the season for roasts and one of my favourites is a roast leg of lamb. It's a perfect dish for the holidays when you have lots of people around and plenty of great sides to go with it. Here's how I roast it in the commercial kitchen and at home.

Did this tonight. Absolutely outstanding... BUT I used a 4.4 pound bonless leg from Costco and it is more football shaped. It took near 2 hours at 350-360 degF to cook until it was 128 degF in the middle. Fresh garlic and Rosemary is key. Served it with mashed potatoes from Livforpasta and carrots and peas. Gravy was from some left over beef au jus and the drippings from the roasting pan.

Simple yet bursting with flavor and juiciness. What's your go-to way to use leftovers? A sandwich, wrap or something entirely different?

Thanks Ula! One of my favourites for the leftovers is popping it in some flatbread with cucumber, tomatoes, onion and some tzatziki.
