Here's how I cook a juicy cut of beef on the BBQ.
Directions
Season the tri-tip generously with salt, pepper, and garlic powder.
- Prepare your grill by turning on only one burner to medium heat, at the far end from where you'll cook the meat.
- Place the tri-tip on the grill. If you have a bluetooth probe, insert it to monitor the temperature throughout the cook. If not, use an instant-read probe to check the internal temperature every 5-10 minutes after the first 30 minutes.
- Cook until the internal temperature of the beef reaches 50°C (122°F), which may take about 1 1/2 hours. Then, remove the meat from the grill and crank up the barbecue to its highest setting.
- Once the barbecue is very hot, drizzle a bit of peanut oil on the tri-tip and grill it for 2-3 minutes on each side, or until it develops a good colour all over.
- With this technique, a long resting period is not necessary as the meat has been slowly brought up to temperature. Slice the beef against the grain and serve.
