Mayonnaise (aka mayo) is very easy to make at home and you can take this recipe as your base and add whatever flavour you like to it, like lemon, chilli, harissa or even Vegemite.
Ingredients
- 2 egg yolks
- 1 tsp Dijon mustard
- juice of ½ lemon
- 300ml (10.1 fl oz) oil of your choice
- salt to taste
Directions
Place the egg yolks, Dijon mustard, oil and lemon juice into a tall jar.
- Using an immersion blender, start blending at the bottom of the jar. Gradually move the blender upwards as you blend to emulsify the oil into the yolks. Take your time to avoid the mixture splitting.
- If the mayonnaise becomes too thick, add a little room-temperature water to thin it out slightly.
- Season with salt to taste, and your mayonnaise is ready!

7 January 2025Use the same ingredients but place everything expect oil in the bowl and then add oil in small batches, whisking it with the rest of the mixture until emulsified, then add another batch and etc. If emulsion are starting to break (kinda monogenic but becoming clunky) add little water.
