Ingredients
- 1 piece of steak (normally I use the end piece that I cut when slicing steaks)
- 1 packet ramen (your choice)
- 1 spring onion, sliced
- 1 egg yolk

Directions
Season the steak with salt and pan-fry to your preferred doneness (keep it rare if it’s going over hot broth).
- Set the steak aside to rest.
- Thinly slice the spring onion and set aside.
- In a serving bowl, add the egg yolk, mayonnaise, and the spicy seasoning packet from the ramen.
- Bring a small pot of water to a simmer. Add the noodles and the other seasoning packet, and cook according to the instructions on the packet.
- While the noodles cook, mix the egg yolk, mayo, and seasoning in the bowl with 2 tablespoons of the hot noodle water. Stir until it forms a smooth, creamy sauce.
- Drain the noodles and add them straight into the bowl. Toss well to coat in the sauce.
- Slice the rested steak thinly and place on top of the noodles.
- Garnish with spring onion greens and a spoon of chilli crisp if using.

Use any ramen you like. Go for spicy if you want heat, or tonkotsu-style if you're after richness. Just split the seasoning packets: spicy goes in the sauce, the other flavours the noodles.
Steak
Steak offcuts are ideal and you can use any cut. This is a great way to use that odd end piece when slicing steaks.
Cook support
Egg yolk sauce only works with hot water so make sure the water’s just come off the boil to get that silky emulsion going.
