I think Tomato Sugo is a great base for your weekly meal prep. It's quick, easy and cheap to make. It can be the base for lots of soups, stews and pasta recipes. You can keep it in the fridge for up to 5 days or put it in the freezer so it lasts months. Here's how I make it at home.

Ingredients
- 80ml (⅓ cup) olive oil
- 3 brown onions, finely diced
- 2 heads garlic, peeled, finely grated
- 2 tsp dried oregano
- 6 x 400g cans peeled tomatoes
- sea salt and freshly cracked black pepper, to season
Directions
Heat the oil in a heavy based saucepan over medium-high heat.
- Add the onion and garlic and season with some salt. Cook, stirring often for 8 minutes, until softened.
- Stir in the oregano and cook for 1 minute. Add the canned tomatoes, then add a little bit of water to the cans to collect all the tomato sauce and add this to the pot as well. Using a masher, crush the tomatoes in the saucepan, until broken down. Simmer the sauce for 20-25 minutes, tasting as it cooks for seasoning.
- Give a final season of salt and pepper if needed, then use as the base for your meal prep dishes.
Recipe notes
Cook support
Use a food processor for chopping the onions and garlic for a quick cheat, but only pulse the mixture, to avoid it becoming puree.
Substitutions
You could use canned chopped tomatoes instead of whole, but the whole canned tomatoes tend to be a better quality tomato.
Storage
Store in airtight containers and refrigerate for up to 5 days or freeze for up to 3 months. You can also pour this sauce into large ice cube trays, which gives you a handy smaller portion for single serve recipes.
Serving ideas
We have utilised this in many recipes including Chicken Ragu with Green Olives and Lemon, Baked Eggs, Lamb Rigatoni with Vodka Sauce, and it makes a great pizza sauce for your next pizza party!
