8 ciabatta rolls, follow this recipe

1 porchetta, follow this recipe
 - 
sundried tomato pesto (pesto rosso), follow this recipe

1 bunch basil leaves
 
Directions
Follow my recipe for Porcetta, and allow it to rest before carving.
- Carve porchetta into 1.5-2cm thick slices, then halve to make semi-circles of slices.
 - Halve the ciabatta rolls horizontally.
 - Spread the base of the rolls with the sundried tomato pesto.
 - Place some slices of porchetta including the crackling on top of the pesto, then top with some basil leaves.
 - Dip the cut side of the roll lid in some of the pork resting juices, then place on top to enclose the sandwich and enjoy!

Origins
This is a popular Italian sandwich and traditional street food in central Italy. The crispy crackling and juicy flavourful meat is as essential as the sturdy homemade bread it is served on.  
Sourcing
You could source ciabatta rolls from good Italian bakeries if you are crunched for time, but the homemade version really is worth it.
Serving ideas
The most traditional version of this sandwich is simply with the pork filling, but other versions include salsa verde, provolone cheese, mustard, semi dried tomatoes…so feel free to add what you feel like to mix it up.
