Pop it in the oven until it’s golden and bubbling, and you’ve got yourself a crowd-pleaser that’ll steal the show from the main event.

Ingredients
- 2 ears corn, husks and silk removed
- 20g butter
- 3 spring onions, finely sliced, green and white separated
- ⅓ cup kewpie mayonnaise
- 1 tbsp caster sugar
- ½ tsp garlic powder
- salt and pepper
- ¾ cup grated mozzarella cheese
Directions
Preheat the oven to 205°C fan force (400°F). Slice the corn kernels off with a sharp knife.
- Melt the butter in an oven proof heavy based frying pan over medium heat. Add the corn and white part of onions and cook for 5 minutes, until starting to brown.
- Turn down the heat and stir in the green part of onions, kewpie, sugar, garlic powder and half the cheese. Season with salt and pepper.
- Spread mixture out so the top is an even layer and sprinkle remaining cheese over top.
- Transfer to the oven and bake for 15 minutes, then switch the oven to grill and cook a further 2-3 minutes until the cheese starts to char a little.
- Take it out (be careful of the hot handle!) and serve alongside a Korean BBQ or some meat and salads.
Recipe notes
The handle will be hot when you pull it out of the oven.
Stick a tea towel or oven mitt over the handle as soon as it comes out of the oven and then use a trivet or tea towel to protect your table when you put the pan down.
What’s good to serve with Corn Cheese?
It’s a classic side for Korean BBQ, so you could serve it with grilled beef, pork belly or chicken.
Can I use frozen or canned corn instead of fresh?
Yes, you can. Fresh corn gives a better texture but if you have some frozen corn in the freezer this is a great recipe to use it up.
