This five ingredient Spanish tortilla recipe is a great dinner option when you want something simple, quick and easy to make. Now, you can add more to it if you want (like cheese or ham) but this is closer to the classic recipe and I like it as it is.

This recipe is best cooked in either a carbon steel or non stick pan as you want the eggs to release once cooked so it comes out in one piece.

Ingredient Notes

Dutch Cream potatoes:

A waxy potato holds its shape through cooking where a high starch variety breaks down and turns to mash in the pan. All purpose potatoes work fine too. Slice them 2mm thick, no thicker, because they only get three or four minutes and they need to be cooked through before they go back in the pan with the eggs.

Ingredients

  • 1 brown onion
  • 1 large Dutch Cream potato (waxy or general purpose work best)
  • 3 large eggs
  • 60ml (1/4 cup) olive oil
  • salt to taste

Equipment

  • Chopping board
  • Chef’s knife
  • Peeler
  • Carbon steel or non stick pan, 20cm or smaller
  • Large mixing bowl
  • Second bowl for the potatoes
  • Whisk
  • Wooden spatula
  • Two flat plates
  • Paper towel

Chef Tips

Rinse the starch off the potatoes

Slice them, then drop them straight into a bowl of cold water. The surface starch is what makes the slices stick to each other and to the pan, and rinsing it off keeps them as separate pieces through the egg. Drain them properly before they go in or the water will spit in hot oil.

Storage

This is one of the few egg dishes that is arguably better an hour after you make it, once it has settled and come down to room temperature. It keeps covered in the fridge for two days and is good cold or at room temperature, cut into wedges. I wouldn’t reheat it hard, because the egg tightens and goes rubbery. Let it come up to room temperature instead. Don’t freeze it.

FAQs

Should the middle be soft?

Traditionally, yes. A Spanish tortilla is meant to be slightly soft and jammy in the centre, and that’s what this recipe is aiming at. If you prefer yours closer to a fully cooked omelette, drop the heat to low and give it another two or three minutes once both sides are set.

How do I flip it without breaking it?

Wait until the egg has set most of the way, so there’s a skin holding it together. Put a flat plate face down over the pan, hold it there, and turn the whole lot over in one confident movement. Then slide it off the plate back into the pan, cooked side up.
