Chef Tips
Lay the chicken on top in a single layer
As the chicken is steaming, it needs the steam to reach all of it evenly. Sitting it on top also means the juices and the rendered fat drip straight down into the rice, which adds more seasoning to your rice.
Finish it off the heat
The lemon zest, butter, pine nuts and parsley all go in once the cycle has finished and the chicken is out. Zest and parsley lose their aromatics with sustained heat, and the butter just needs to melt into the hot rice rather than cook. Stir it through, put the lid back on for a minute, and serve.
Storage
Best eaten straight away. If you do have leftovers, cool them quickly, keep the rice and chicken in a sealed container in the fridge and eat them within a couple of days, and reheat until piping hot all the way through.
