I have cooked this recipe a few time and is one of my favorites for a romantic dinner for two or to impress the guests when hosting dinner for friends and family.

This recipe is simple and easy to cook without skimping on flavor, like all of Andy's recipes.

Andy, take any leftovers from those braised ribs (if you've got any), shred them and make them into croquettes (not the bechamel based spanish ones. Just pass your sauce - veg and all - and add as much flour as needed. Mix just enough into the shredded meat to bind, watching for consistency. Pané and crumb and you're golden. They also freeze nicely).
